t all began when I was 5 years old. I was given my all-time favorite gift – a lemon-yellow Easy Bake oven. Powered only by a 100-watt bulb, I baked my first cookies, cakes and pies. I spent endless hours making miniature baked goods for my brothers to taste-test. I’m not sure who enjoyed it more!

When my grandmother visited, I loved spending time cooking with her and my mom and listening to old stories of them growing up in Cuba. I would watch my "abuela" cook and write down the recipes so I could cook them myself when she left. I still have those recipes in my 3rd grade handwriting!

My dad loved exotic cars and cars that went fast. I can remember "helping" him change the oil in our (not so exotic) AMC Rambler back in the late sixties with our old tabby cat Tiger at our sides. We would follow the Formula One and Can-Am race circuits  – from Watkins Glen to Daytona!

My passion for tea began with my Aunt Elive. In a family of coffee and espresso lovers – my aunt was the only tea drinker. As a child I loved the thought of "catching up" over an afternoon cup of tea.

Intrigued by the endless complexities of tastes and health benefits of one plant – Camellia Sinensis – my interests grew. When traveling with my family, they've grown accustomed to my requests of sharing a bit of everyone's suitcase with my latest tea findings.

None of that has changed… I still love creating small baked goods, searching for the perfect tea and driving. And now I have the opportunity to combine the things I enjoy most into Bubble & Brew.

My daughter, Madison, and I were lucky enough to find the perfect “venue” for our tea business – a Citroen HY van. “Ruby’s” a retired fire truck from Pont-L’Évéque, Normandy, France, complete with the day-by-day rescue log from  1980-2001. (excerpts to come!)

We are very environmentally conscious

One of our concerns of offering items "to-go" was the environmental impact of waste. We take every step possible to use plant-based packaging and utensils. Our cups and utensils are cornstarch-based and compostable, our plates are paper and compostable, and we offer cornstarch or paper straws. Even our tasting cups are made from sugar.

You may have noticed, while we are serving our iced teas, hot teas and espresso drinks, we have no generator to power our appliances. That's because our truck kitchen is run completely on batteries – just like a Tesla!

In 2015, after several years of diagnosing, we found out Madison (and my husband) are allergic to wheat. Calamity! For years we've enjoyed baking (and eating) for fun and to avoid preservatives & additives. So we set forth with the challenge of making some of our favorite treats gluten-free – because let's face it – there are a lot of terrible tasting gluten-free baked goods out there!

After much trial and error, we've come up with delicious recipes that are gluten-free and taste great! There's always some gluten-sensitive items included on our daily truck menu. We've got blueberry pies (with a crust so flaky, most people don't even realize it's gluten-free), apple strudel, almond cookies, French macaroons, cinnamon buns, cupcakes, frosted sugar cookies and more! We're constantly adding to our repertoire. So when you see the (gs) symbol next to our treats, it means there are no wheat products in them, but since we bake in a kitchen not solely used for gluten-free baking, we use the gluten-sensitive term instead of gluten-free.
